Chardonnay for The Chard Project is harvested from high quality vineyards in the Sta. Rita Hills and Central Coast of California. After the grapes are sorted and pressed, the juice is fermented in stainless steel tanks. The final assemblage is aged in 2-4 year old French barrels for 6 months to add texture with a hint of oak. After being bottled, the wine rests for three months before its release.
